Mandelo Zaru Soba (Cold Buckwheat Noodles with Cocktail Grapefruit Sauce)

A simple but delicious cold noodle dish with a unique citrus component, perfect for any time of the year.

Ingredients

  • 300 g soba noodles
  • 2 tbsp mentsuyu home-made if possible, but ready-made is fine
  • 1.5 tbsp water
  • 2.5 tbsp cocktail grapefruit (mandelo) juice see note
  • 1 tsp cocktail grapefruit (mandelo) zest
  • 1 tsp sesame oil
  • 1/2 tsp karashi mustard powder
  • 1/2 tsp ginger
  • 1-2 large scallions green and white portions, sliced on the diagonal
  • 1/4 sheet nori cut into thin strips
  • cocktail grapefruit (mandelo) to garnish

Instructions

  • Cook the soba noodles as instructed on the packaging until they're al dente. Drain and rinse with cold water.
  • Combine the mentsuyu, water, mandelo juice, and zest, ginger, and karashi mustard powder and mix thoroughly. Add the sesame oil and whisk together. Try to break the oil up enough so that it doesn't sit on top of the sauce.
  • Serve the cold soba noodles in a bamboo basket (zaru) or in a bowl. Garnish with chopped scallions, nori, and mandelo slices, and serve with the dipping sauce in individual bowls.

Notes

If you can't find mandelos or they're out of season, an excellent variation uses a mixture of grapefruit and orange juice. Feel free to experiment with the citrus element, but try to make sure that you use something with a bitter/sour component (e.g. lemon or grapefruit). Purely sweet citrus fruits like oranges or mandarins will not balance the flavours of the tsuyu (dip) as well. If you have access to any of the rarer Japanese citrus varieties (e.g. yuzu or sudachi), you could also try using one of those in place of the mandelo.
